Nick taught me how to make vegan pancakes.
juice from 1 can of chickpeas
1 cup water
2 cups flour
1/4 tsp baking powder
2 tsp sugar
oil for frying
Preheat oven to 50C to keep the pancakes warm. Mix all ingredients
(except oil) until smooth (I use a smoothie blender but an eggbeater
will work too). Put some oil in a pan and heat it up to a medium heat.
Pour a ladle-full of mix into the pan. Fry on both sides until slightly
browned. Pop the pancake in the oven while you make the next one. Add a
little oil to the pan after each pancake.
Serve with something that isn't honey.
Notes: The chickpea juice can be frozen before use. (I do this when I
use the chickpeas and save the juice for pancakes.) The pancake mix can
be kept in the fridge overnight if you want to make it ahead of time.
